A Magical Season 

I feel there is something so magical about the Season of Fall. Leaves change color and drop from the trees, the weather cools and there is the Autumn Harvest. For me, I feel most grounded during this Season. I feel at home and ready to slow down, cook a bit more and focus on creative projects. 

Lucas and I have been in the kitchen a lot this week. It is my second week into the Integrative Nutrition Health Coach program and there has been quite a bit of discussion and lecturing on the importance of overall health including food, relationships, physical activity and career. There have also been amazing lectures on the idea that we are all different, which means the nutrition that works for me may be slightly different than you. 

I very much relate to this and respect it whole heartedly. I feel the same when it comes to parenting. Each parent is different as well as child and it is my every day intention to raise Lucas with the awareness that he is growing and developing at a rapid pace. I want my choices while raising him to interact and compliment his character, so that he feels safe to explore and authentically live his life. 

It has taken me over a decade to feel really comfortable in the kitchen and now I love it. I love veggies and fruit and completely content with thriving mostly from these items. I cook tons of rice and barley dishes, beans, soups, and potatoes. I have never craved meat (I grew up with very little meat) and now only occasionally eat fish and chicken. (Maybe once every 4-5 months). I prefer to know where the meat has come from and my priority is always organic. I do, however, love bread and cheese and chocolate and I REALLY like peanut butter. I mean really like it😙

Below is one of my favorite items from my pantry this week and then I like to add more beans, tomatoes, onions and carrots. I also like to add a bit more spice to it. It goes with anything but we had it with potatoes one evening and tortillas the next. 

Organic Valley Eggs are some of my favorite and hard boiled eggs are a staple in our house. I do 6 minutes if I want the yolk runny, 7 minutes most of the time, which is a happy medium. 

We made banana bread with almond flour. AMAZING. 3 eggs is the key. Next time I am adding chocolate chips though🤗

And a few more fabulous items including the new season Bobos flavour they just sent me. Gingerbread is soooooo good and toddler approved👍

And I am jumping for joy that it is squash season. Butternut and acorn squash are my go to’s.
